I · Story
Welcome to La Colina, an Argentinian table in central Amsterdam. We’re not in a hurry, and we don’t cut corners. An asado takes the time it takes: meat over open flame, in a room that smells of glowing embers and oak.
Our grill masters are craftsmen. Every cut is dry-aged in our own cellar, rests under sea salt, and meets the fire at an hour our grandparents would recognise. The wine list runs through Mendoza and Patagonia: Malbec, Torrontés, and a few surprises from small bodegas.
Argentinian cooking the way it’s done in Buenos Aires. No shortcuts on time, no shortcuts on technique.
We don’t rush. The fire is stoked an hour before the first cut.
Argentinian cooking, dressed up for an evening worth remembering.
A good cut of meat asks for two things: fire, and patience. With us, it gets both.
